How to make Kadhai paneer the easy way

Love paneer but bored of having mutter-paneer or palak-paneer all the time? Spice up your paneer palette with this simple recipe of Kadhai paneer.

Serves 2

Ingredients:
Indian paneer: 250g
Peppers: 1 red pepper and 1 green pepper
Tomatoes: 2-3
Ginger: 1 spoon
Chilli: 2-3 small ones
Fenugreek leaves/ methi: one bunch

Seasoning:
Salt: to taste
Cumin-coriander powder (jeera - dhania powder): one pinch
Asafoetida (hing): one pinch
Turmeric: half a spoon

Method:

Dice paneer and peppers into half inch cubes. Grind tomatoes, ginger, chillis into a puree.

Heat some oil in a pan and stir-fry the paneer for 3 minutes until the paneer becomes tender. Remove the paneer cubes and stir fry the peppers in the same oil. Remove the pepper pieces.

In the same pan, add little oil and add cumin seeds. When the seeds crackle, add the tomato-ginger-chilli puree. Add the seasoning of asafoetida, Cumin-coriander powder, and turmeric. Stir the gravy until tomato gravy reduces. Add little water and bring it to boil. Add the stir-fried paneer and pepper cubes and let it simmer for 5 minutes on low heat. Remove the lid and keep it on the flame for another minute.

It is ready! Try it with healthy wholemeal or seeded bread.
