Healthier recipe for kanda pohe

Kanda pohe is a quintessential Maharashtrian dish that is popular across all parts of India. A plate of piping hot kanda pohe is one comfort food that is healthy.

Here's a recipe for a yummy snack that is packed with your Five-a-Day stuff!

Serves 2

Ingredients:
Beaten rice/ rice flakes or pawa (preferably thin ones): 2 cups
Vegetables:
Onion: 1
Tomato: ½
Carrot: 1
Potato: 1/2 a jacket potato
Frozen green peas: 2 tablespoons
Green chillies: chopped, to taste
Cashew nuts (optional): a few

Seasoning:
Oil: 1-2 tablespoon
Mustard seeds: 1 spoon
Cumin seeds: ½ spoon
Turmeric: half spoon
Salt: to taste
Half a lemon: to squeeze on top for a tangy taste
Coriander: chopped, little

The trick in this recipe: This one’s a quickie anyway! You could fix it in even 20 minutes flat!

Method:

Finely chop onion and dice potatoes very thinly (potatoes should not burn but have to become crisp and cook well without water – so make them as thin as you can!). Grate the carrot.

In a pan, heat some oil and add mustard seeds, cumin seeds, and turmeric and green chillies. When the seeds splutter, add the chopped onions.

Add some more oil, simmer the hob and add potatoes, grated carrots and some green peas.

Add salt to taste. When the vegetables are done, add the pawa/poha. Mix it gently and place the lid and let it cook for 5 mins on a very low flame.

Remove the lid, stir the poha and garnish with coriander and 1-spoon lemon juice.
